During our second unit of our Food class titled Sauté where we talked about math concepts like logarithms, proportions, and more graphing we simultaneously took on the question of what makes us human? We learned about the food hypothesis. The idea that human brains evolved with the help of cooking and denaturing our food. Through this process its believed that people got access to more of the nutrients our brains need allowing for us to become smarter, walk on two feet, and become less ape-like. This unit we learned about leavening and how humans learned to use this. We talked about the various things involved in chemical and biochemical leavening. We even tested to see what would happen if we substituted the ingredients necessary for this reaction with something similar. For example we swapped out the eggs in brownies for flax seed or yogurt (independent variable). We did this to try different emulsifiers to see if it will still leaven(Dependent variable). Another time we made banana bread but replaced the the brown sugar which was the leavening agent with white sugar and molasses. (independent variable). The bread did not change much aside from the taste like we thought. Our last experiment we made bread but switched the regular flour for whole wheat (independent variable). The whole wheat had chunks inside, but leavened the same. (Dependent variable). These experiments, especially the last one, game me inspiration for my action project. I would do the same type of experiment but with gluten free flour because I wanted to see if it would still leaven with our gluten. Without further ado, here is my Action Project.
Afterthought - After completing AP #2 I can conclude one thing for certain. This has by far been the most delicious action project yet, and I genuinely love food science. I learned that a lot more goes into cooking than I originally thought, many ingredients have purposes way more important than being yummy that I had no idea about. I am specifically proud of my recipe finding. the recipe worked really well even with the substitution and still tasted great! In conclusion this is my favorite AP so far!
